If you’ve ever enjoyed bread made from fresh, stone-ground heirloom grains, you know its flavor and character are miles beyond the super-refined, mass-produced loaves we buy for convenience. Same with vodka, so for the distiller and connoisseur, the challenge is to use the right ingredients in the right proportion — which eventually led us to a unique blend of spelt, an ancient grain that imparts nutty sweetness, and triticale, a Scottish wheat-rye hybrid that brings smooth complexity. Centuries ago, vodka wasn’t the vapid, tasteless drink it is today. It was typically made from the recent harvest, somewhat crudely and imperfectly distilled — and no one wanted to over-distill or over-filter and strip away all that lovely flavor. At The Walter Collective, we totally agree, so we work hand-in-hand with master distiller Ryan Hembree of Skip Rock Distillers to mimic this old-world process, artfully distilling great grains in a state-of-the-art Kothe still to produce a truly distinctive vodka.
